First edition, second impression hardback of THE VENISON COOK - 106 Imaginative Recipes by Diane and Nicholas Dalton and published by The Crowood Press Ltd., Marlborough in 1992. Signed by Diane Dalton on the front endpaper.

The book is in very good condition (Clean orange cloth boards with gilt lettering on the spine), with only minor wear to the illustrated dust jacket which is price clipped (light creasing to edges and a few very small spots inside the jacket). Internally, the pages are clean and tight and there are no tears and no other inscriptions. There is minor yellowing towards the page edges.

Diane and Nicholas Dalton run a natural food centre and specialise in traditional English foods, smoked from their owner smoker, and of course venison and game. Nicholas is a keen sportsman and fisherman and Diane was a physiotherapist for twenty years so has a keen concern to promote healthy eating combined with a passionate interesr in good food.

Venison is one of the original free-range, additive-free meats, low in fat and cholesterol and gaining popularity by leaps and bounds in this health-conscious age. Here are 106 recipes ranging from soups and cold buffets through to the more challenging and exotic dish for that special occasion, all making the most of this delicious meat.

Tempt your family and friends with dishes such as Saddle of Venison with Tansy and Rosemary, Venison Rump Steaks with Curd Cheese and Chives, Hunters' Purses, Brochettes of Venison Kidney, Smoked Venison with Quail's Eggs and Mixed Peppers and many, many more.

The authors give practical advice on species, culling and seasons, preparation of meat and marinading, as well as a wealth of suggestions and new ideas for combinations of ingredients. The authors easy style is complemented by an entertaining series of Matthew Lawrence cartoons throughout.

In recent years venison has become more easily available and this book helps to dispel the myth that venison is hard to cook.

Adopting a light-hearted and highly readable style, the authors have devised menus to suit every pocket and occasion, regardless of how regularly you cook venison.

Every method of cooking the meat is included and readers will find delicious grills, mouth-watering roasts and succulent casseroles, imaginative cold buffets and even a barbeque section.

128 pages. Illustrated with black & white line drawings within the text.
